Avocado Tofu Benedict

Vegan Recipe Of The Week

The classic Eggs Benedict brunch gets a healthy makeover as tofu is marinated in cumin, thyme and chipotle chili and served over a whole wheat English muffin. Sliced avocado and arugula are sandwiched between the flavorful tofu and English muffin and a lemon cayenne Hollandaise drizzle completes the dish. This recipe comes to us from Lindsay of Cook. Vegan. Lover.   Serves 4

This was fun to make and delicious!  We had it for lunch today with a veggie packed Miso Soup and a Super Salad with Tomato/Veganaise Dressing. Yummmmmy!

For The Marinated Tofu

1 cup low sodium vegetable broth
1 teaspoon red wine vinegar
¼ teaspoon chipotle chili powder (I didn’t have chipotle chili powder so used regular chili powder)
¼ teaspoon cumin
¼ teaspoon garlic powder
½ teaspoon dried thyme
1 tablespoons nutritional yeast*
6 ounces extra firm tofu, sliced into 4 triangles

Vegan Vietnamese Rice Paper Rolls

These Vietnamese treats are filled with vermicelli, Chinese cabbage and bean sprouts and seasoned with lime, mint, chili and cilantro. A shallot miso dipping sauce provides the perfect balance to these light rice paper rolls with unexpectedly intense flavors. This recipe comes to us from Trudy of veggie.num.num.

Serves 6

For the dipping sauce:

  • 1 tablespoon water
  • 2 tablespoons sweet chilli sauce**
  • 1 tablespoons low-sodium soy sauce**
  • ½ shallot, finely diced
  • ½ tablespoon fresh mint, finely chopped
  • ½ tablespoon cilantro, finely chopped
  • 1 teaspoon miso paste**

To complete the rice paper rolls:

  • 4 ounces vermicelli, cooked according to instructions
  • 1 cup Chinese cabbage, shredded
  • ½ cup bean sprouts
  • 1 bell pepper, thinly sliced
  • ½ cup fresh mint leaves, finely chopped
  • ½ cup cilantro, finely chopped
  • 1 fresh red chili
  • Juice of 1 lime
  • 1 ½ tablespoons low-sodium soy sauce**

 Some Benefits of Arm Balances

Arm Balances require both strength and flexibility. They require weight bearing on the arms which builds bone density and muscle which prevents osteoporosis as well as building upper body strength. They also help strengthen the balance reflexes to prevent falls. Arm Balances strengthen the abdominal muscles as most balance poses require abdominal strength to support and stabilize the center of your body. The abdominal muscles must contract even more strongly to lift the weight of your pelvis and legs off the floor in some of the arm balance poses. Mentally Arm Balances are the perfect poses to practice persistence in the face of challenge, as well as non-attachment to the fruits of your labors.

Meditation Class July 12, 2013

De-stress from your busy workweek with the 7:15pm Friday Night Meditation Class at Lake Center Yoga!

The class begins with a delicious centering followed by the benefits of Sanskrit chanting and Yoga Sutras to take your mind from the clouds to the vast blue inner sky.  This week we’ll access Yoga Sutra 1.4 for our guided meditation to expand the blue sky clarity of the mind following an abbreviated asana practice and a breathing practice (pranayama).
